Los Tres Manantiales means “The Three Springs.”
The springs refer to a special location near Laura’s birthplace in northern Mexico, an area called Los Cinco Manantiales. The number three is a nod to the three family members – Laura, Jose, and their daughter Giselle - who run the business.
The food at Los Tres Manantiales is prepared fresh throughout the day using locally-sourced meat and produce. Laura actively seeks out the best in organic products for all her creations, from organic spinach and mushrooms to local, organic honey and teas. Although customers can rarely resist shrimp cocktail or steak fajitas, Los Tres Manantiales also happily serves a wide variety of vegan, vegetarian, and gluten-free options.
Owner, Laura Gaytan, grew up in Allende-Saltillo, Mexico, surrounded by authentic Mexican cuisine.
She watched her Abuelita craft hand-made tortillas and gorditas, even grinding the corn and preparing traditional Mexican dishes from scratch. Laura also admired her mother's talent for making the most delicious tamales for everyone to enjoy.
Today, Laura’s mission is to share with the community this enduring traditional Mexican cuisine made using the freshest ingredients possible. Since 2014, Laura’s tamales and quesadillas have flourished amongst regulars at the weekend Oshkosh Farmers Market. With the opening of Los Tres Manantiales in October 2016, fans of Mexican food no longer must wait until Saturday rolls around to satisfy their cravings for delicious chicken tamales and salsa verde.
